These are a lighter (not in the less fat way, but texture) alternative to traditional morning grits. They are awesome alone or you can serve them with something savory such as: sautéed shrimp, fried chicken, catfish, whatever you want!
Cook grits in the milk with the seasoned salt and the garlic until done, about 20 minutes.
Add the cayenne, butter, cheese and egg yolks to the grits.
Stir well and let cool.
Whip the egg whites until stiff and gently fold into the grits mixture. Using a rubber spatula, scrape the grits mixture into the sprayed bowls or ramekins leaving them half full.
Bake until soufflé puffs up to double, about 25 minutes.

You can also add fresh herbs for added flavor and cuteness! I like to add fresh thyme, scallions or flat leaf parsley to my cheddar grits when I’m feeling extra haughty! Lol
