Marinated Collard Greens Salad

Ingredients
- 2 bunches Collard green leaves washed and rib removed
- 1 tomato sliced
- ¼ Red onion sliced thin
- 1 lemon juiced
- cup ¼olive oil
- Few sprigs Cilantro pulled off stem
- Sea salt and Cayenne Pepper to taste

Instructions
- Stack collard greens on top of each other.
- Roll them into a tight cylinder.
- Take your knife to the tip of the cylinder and slice greens into thin shreds.
- Cut lemon in half and add to olive oil
- Combine collard greens with tomatoes and red onions
- Pour lemon and oil mixture over salad
- Add cilantro, sea salt and cayenne pepper to taste.
