Marinated Collard Green Salad
I know that kale is the bees knees right now, but I found out that good old raw collard greens actually have more nutrients than kale. Plus, this is your way to mix it up a little bit!

Ingredients
2
bunches Collard green leaves
washed and rib removed
1
tomato
sliced
¼ Red onion
sliced thin
1
lemon
juiced
cup
¼olive oil
Few sprigs Cilantro
pulled off stem
Sea salt and Cayenne Pepper
to taste
Instructions
Stack collard greens on top of each other.
Roll them into a tight cylinder.
Take your knife to the tip of the cylinder and slice greens into thin shreds.
Cut lemon in half and add to olive oil
Combine collard greens with tomatoes and red onions
Pour lemon and oil mixture over salad
Add cilantro, sea salt and cayenne pepper to taste.
