Toasted Quinoa Salad

Ingredients
- 1/4 cup Avocado oil can substitute with olive oil or grapeseed oil
- 1/4 cup Dried apricots chopped
- 1/2 cup Pistachios raw or toasted
- 1 Orange juiced and some zest
- 2 sprigs Thyme fresh and pulled off stem
- Sea salt to taste
- 1 cup quinoa uncooked and rinsed im water
- 2 cups water can be substituted for vegetable stock

Instructions
- Preheat oven to 350F. When oven is ready spread dry, uncooked quinoa on a sheet pan. Toast until light, golden brown. Cook quinoa by adding to boiling water. Simmer for about 20 minutes. Quinoa will look like fluffy coils when ready. Spread out on sheet pan and refrigerate until cool.
- When the quinoa is cool, lightly toss with avocado oil to make sure there are no lumps in quinoa. Add all other ingredients. It's reeeaady!
